If you don't live near a junkyard, and you don't like used, you could consider an online parts dealer. I've purchased from both Majestic Honda - The Internet's #1 Honda Automotive Parts Store and Honda Parts at HondaPartsDeals.com: Honda Accessory, Honda Car Parts, Honda Auto Parts, Honda Accord Parts and they both seem to be reliable. Both are competitive with pricing, although shipping can get expensive on the larger parts. I've ordered interior panels (when I sold my racing interior, I had to replace a lot of parts due to worn out clips), and they're well packaged and in very good condition.

I wouldn't consider painting any of the surfaces, as it won't look nearly as well as OEM panels. Re-upholstering is definitely an option for carpeted surfaces, and since you're a reconditioning technician I'm sure re-wrapping the seats won't be too tough for you. Aside from that, all the plastic panels would be best suited to replacement.
