Stovetop Stuffing

I just made some Stove Top Stuffing. I eat it as a snack. Sometimes, dry right out of the can. Anyway, my question is: does anyone ever have trouble getting the consistency of the stuffing just right? I mean, mine came out too moist. I wanted two servings, not one, so I doubled the instructions, but I didn't use a whole tablespoon. Also, do you guys use a spoon or a measuring spoon for your "tablespoon" when cooking, or do you just not measure at all and eyeball it.

P.S. I want to try making a turkey and stuffing mix. It ought to be fun.

I too love STS. But I really just eyeball it these days, with the water, margarine, and mix. I usually try to err on the side of a little too moist initially and then if I can quickly tell I'm going to have too much fluid left I throw in a little more mix. It's so easy to make.
