Saluting is an honor reserved for Officers of the branches, most NCO's would probably not see it as you trying to show respect, but more of you not understanding their position in the military. My suggestion would be you show your understanding of military rules and traditions by not saluting, but by standing at parade rest when addressing an NCO, lest he advise you otherwise, this is a way to demonstrate your respect to an NCO.
