Question Install SS lines and removing calipers??????

I'm wanting to repaint my calipers since before I used one of the brush on kits and it looks like crap. I was going to pull them off and spray them black or gray and clear them with some high temp paint. While I'm doing this, I might as well swap out the OEM lines for some SS ones.

I'm going to have to have the calipers off for around 24 hours so they can cure.

Questions:
Will all the brake fluid run out during this time and then I'll have air in my system?

Would it be OK to pinch off the rubber hose since I'll be putting SS lines on when the calipers go back on?

I did find some info on the order to bleed the brakes by searching. I have a Motive Power bleeder that I'll be using for the first time. Does any one have any tips on using that for our cars?
