Follow these simple steps

Start Photoshop or Paintshop, or any other paint program that supports layers.

1 - load image
2 - select image
3 - paste as new layer
4 - select background layer (you may want to turn off the top layer)
- HSL option, drag S all the way down (saturation) now it's B/W
5 - go to top layer, make it visible (it should be colour)
- Use eraser/lasso whatever tool you want to delete/erase parts of the
colour layer you don't want, and then, voila...

You missed a small green pine tree branch on the left side of the falls. :) Better than I could ever do though, I don't know the first thing about this stuff... It's neat though...

I forgot to increase the contrast but the whole thing took me under five minutes.

Use Black and White, it gives you a lot more control than just using desaturate.

Some of the editing Prog. don't have that B&W console like CS has. I know Elements didn't. It just had Hue/saturation. Also Black and White gives you no control over the saturation. Just the amount of the depth of black. Sometimes I like to see a little color left, Makes it pastel. So I use Hue/Saturation adjustment.
