Now do you mean you want to drive someones car, or do you have your own to learn on???

Really all the theory and know-how is easy .. and you can probably learn the 'hardest part'* within a few hours. But unless you are driving it everyday for months you'll never really KNOW how to drive stick (some people still don't)

*according to most people it would be the starting from full stop

There are some driving schools in the GTA that specialize in manual transmissions.

Try to find a friend or family member with an old car, thats the easiest way. I learnt to drive my civic in about 10 mins, its getting good that is hard.

I learned to drive standard working at honda and gasing cars/detailing... Also got to drive some rx-8's, and v6 eclipses as well...

the main thing in learning stick is just figuring out the spot at which the gear catches on the clutch... and then things should be easier from there...
