You can change the springs. With the cams out the valves should be closed. Then with the adaptor from a compression tester, hook your air compressor to that. Shouldnt need alot of pressure. The air pressure will hold the valves closed while you have the retainers and springs off. Then put the new ones on. Also for a saftey measure, make sure the cylinder you are working on, the piston is at top dead center. Then if you do knock the valve down it wont fall into the cyinder. It will just sit atop the piston and wont fall to far.
