Ive done it before on a previous car. Its not as hard as it seems. My car shut off but not to prevent hydrolock but because i shot a rod out the bottom of the oilpan before i could ever get my hand from the wheel to the key to kill the motor. It doesnt matter if you let off the gas or not if the filter is submerged because the motor is going to be drawing in air from somewhere and your intake is the only spot for that to happen so think of it like a big straw. It doesnt necessarily have to be submerged either just enough suction to pull water up. And none of this how do I know if i sucked up water if you did you WILL know it. I was doing no more than 2.5k coming around a corner when i hit a low spot and blew the motor. I pushed it home thinking maybe i just fried the battery (praying i didnt lock it) and we tryed to push start it and let me tell you ive never seen a car stop on the dime like that after you let out the clutch. Its not pretty but it happens.
