18 x 8 +37 with a 215/40/18 will definitely work both on stock suspension and lowered on coilovers. If it were me I would probably go with the 225/40's since they are 18's . I don't mind 215/45/17's (I have them on my 17 x 8's) but from what I have seen I don't usually like the look of 215/40/18's on 18 x 8's, however they will fit and they will provide a little more clearance. Sorry I don't have any pics handy, you're going to have to search through the threads for those. All I know is Jeshua has 225/40/18's on his 18 x 8's (Gram Light Titans, aka rainbow wheels) and he has plenty of pics here on 8th.
If you run enough camber in the front and rear, nothing crazy, just a little more than stock then you should be able to lower the car on coilovers with one finger gap and run the 225/40/18's and you'll be looking good and shouldn't have any rubbing issues except for maybe the slightest rub on big bumps or real hard turns, which I wouldn't worry about.
