They took samples from artic ice. Co2 gets trapped once ice age starts so they are able to measure an approximate by using carbon dating(C-14) and the amount found. Then, you put that in a chart and you get a graph. It is a natural occurance which people in the middle ages experienced as well as an ice age in the 1600's which were all documented.
