when i use my Pro on GTR2 on the PC, i actually lock my wheel into 220 degees (i believe most non 900 wheels are 240).

the problem is that Gran Turismo, you only have a choice between 200 and 900. 200 is just too small for normal cars (though its fine for race cars, JGTC, DTM, LeMans, etc) on the PC you can choose any 1 degree from 90-900.

another problem is that there is a physical lock for 200, but only a FFB lock at any other point so if you where to set it to 240 lets say, what wuld happen is the FF motor just get reallly strong and you wouldnt actually come to a lock. maybe its improved on the GT and G25, but sometimes you cant tell if its handling grip your feeling or the steering lock.

so yeah, i use 900, but really its not needed.
I'm talking about hairpins like turn #11 on suzuka circuit, this one nearly requires all 450 degrees in 1st or 2nd.
