Get a low profile racing jack and you won't have that problem. Best investment I have made in a while.
If your still going with the 8" wheels w/ a +38 offest, you shouldn't have any need to roll your rear fenders unless you are running a 225 or 235 tire with little to no negative camber.
I have more clearance issues with the front fender liners than I do with the rear fenders with a +32mm offset.
