Call the dealer first thing in the morn, and talk to your salesperson. Actually, if you don't have to work first thing in the morn, I would get down there as soon as they open in person. It will be harder for them to blow you off or say no to your face. Since the deal was done on the weekend, there's a chance you can alter it. But, you signed, so you kind of have to hope they be nice to you and let you remove the $2600 worth of stuff.. Just be cool to them and hopefully they'll be cool back! Let them know you didn't feel like there was a lot of transparency in the deal and were under a different impression about the price and when the time came to sign things you kind of didn't really understand things and you were "trusting them" since they do this every day.
