Most likely nothing would happen. However, it is a precaution against a couple things.
First of all, if you take the negative off first (and on last) you have less of a chance of an electrical spike which could damage circuits. It isn't very likely, it is just better safe than sorry.
The main reason to do it this way however, is that if you take the negative off first and the wrench touches something metal nothing happens. Then when you take the positive off if the wrench touches something metal still nothing happens because the negative is already off.
If you take the positive off first and your tool touches something metal it can cause a short. If you are careful it might not be that likely, but I have seen it happen many times (I may have even done it myself

).
